Edible Cookie Dough Balls

Here's a tasty recipe for Raw Vegan Peanut Butter Cookie Dough Balls that we served at the 2024 Women's Self Care Escape.

Ingredients:

  • 1 cup rolled oats

  • 1/2 cup natural peanut butter (unsweetened and creamy)

  • 1/4 cup maple syrup

  • 2 tablespoons coconut oil, melted

  • 1 teaspoon real vanilla extract

  • 1/4 teaspoon sea salt

  • 1/3 cup dark chocolate chips or chopped dark chocolate

Instructions:

  1. In a food processor, blend the rolled oats until they form a fine flour-like consistency.

  2. Add peanut butter, maple syrup, melted coconut oil, vanilla extract, and salt to the oat flour in the food processor. Process until a dough-like consistency forms.

  3. Transfer the dough to a mixing bowl and fold in the dairy-free chocolate chips or chopped dark chocolate.

  4. Take small portions of the dough and roll them into bite-sized balls. If the dough is too sticky, you can wet your hands with a bit of water.

  5. Place the peanut butter cookie dough balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

  6. Once chilled, your raw vegan peanut butter cookie dough balls are ready to be enjoyed!

These little treats are a perfect blend of peanut butter goodness and chocolatey indulgence. Store them in the refrigerator for freshness and take them out whenever you need a quick and satisfying snack. Enjoy!
