Strawberry ice cream (paleo, Vegan, dairy free, soy free)

1 ½ c organic strawberries, hulled

1 can full fat coconut milk

1 can coconut cream

Splash of white balsamic vinegar

1 c sweetener of your choice

​          (I used a stevia baking blend)

1 tsp pure vanilla extract

¼ tsp pink Himalayan salt

¼ tsp cardamom

2 tsp lemon juice

Handful of organic freeze dried strawberries

1 scoop vanilla protein powder of choice

¼ c cherries (enhances color)

1 banana

¼ c melted coconut oil

Blend all ingredients in a high speed blender.Freeze in an ice cream maker according to manufacturer’s directions.

Fold in the following:

organic strawberries, hulled and diced

coconut flakes

cacao nibs

Freeze 2-4 hours until firm and “ripened”. Remove from freezer a few minutes before serving for easier scooping. Enjoy!!!
