Thanksgiving Leftover Bread Pudding

Don’t put away all those Thanksgiving leftovers! Instead assemble this recipe and leave in the frig overnight so you can just pop it into the oven the next morning! Great if you have overnight guests you need to feed or celebrate the kickoff of the holiday season like we do. Ingredients:


  • 8 cups leftover stuffing or dinner rolls

  • 1 lb leftover turkey, vegan turkey or whatever your holiday protein was

  • 1 cup shredded sharp cheddar cheese or vegan cheeze

  • 3 c chopped veggies (my stuffing already had onions, peppers, mushrooms and celery so I used my leftover brussels sprouts)

  • 1/4 cup chopped fresh parsley

  • 8 large eggs

  • 2 1/2 cups milk or non dairy milk

  • 1 teaspoon Dijon mustard

  • 1 teaspoon dried thyme

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

  • Optional: a couple of spoonfuls of leftover cranberry sauce

  • Olive oil or cooking spray for greasing


Instructions:

1. Prepare the Bread Cubes:

· Cut the bread or stuffing into cubes and set aside.

2. Assemble the Pudding:

· In a large mixing bowl, combine the bread cubes, cooked protein and vegetables, shredded cheddar cheese/cheeze, and chopped parsley. Toss to mix evenly. · Transfer this mixture to a greased 9x13-inch baking dish.

3. Prepare the Egg Mixture:

· In another bowl, whisk together eggs, milk, Dijon mustard, dried thyme, garlic powder, salt, and pepper and cranberry sauce.

4. Pour Egg Mixture:

· Pour the egg mixture over the bread mixture, ensuring the bread is evenly coated. Press down slightly to submerge the bread.

5. Top with Parmesan:

· Sprinkle grated Parmesan cheese or nutritional yeast evenly over the top.

6. Refrigerate and Soak:

· Cover the baking dish with plastic wrap and refrigerate for at least 2 hours or overnight, allowing the bread to soak up the flavors.

7. Bake:

· Preheat the oven to 350°F (175°C). · Bake the savory bread pudding for 45-50 minutes or until it's golden brown and set in the center.

8. Serve Warm:

· Allow it to cool for a few minutes before serving. Slice into squares or rectangles and enjoy your savory breakfast bread pudding.
