Beat the Heat: 4 Healthy No-Cook Meals for Hot Summer Days

When it's too hot to turn on the stove, eating well doesn't have to go out the window. With a few healthy convenience foods and fresh ingredients, you can put together a satisfying meal in minutes—no oven, no stress, and very little cleanup.
Here are four of my favorite no-cook meals that are packed with nutrition and perfect for busy summer days.
Vietnamese Shrimp Shirataki Noodle Bowl
Serves 2
Ingredients
Bowl
2 packages shirataki noodles, rinsed and drained
8 oz cooked shrimp
1 cup shredded carrots
1 cup cucumber, julienned
1 cup bean sprouts
½ cup thinly sliced red bell pepper
2 green onions, sliced
Fresh cilantro
Fresh mint
Chopped peanuts (optional)
Lime wedges
Dressing
3 Tbsp lime juice
2 Tbsp coconut aminos
1 Tbsp rice vinegar
1 tsp toasted sesame oil
1 tsp grated fresh ginger
1 clove garlic, minced
1–2 tsp sriracha (optional)
Instructions
Whisk together all dressing ingredients.
Divide the noodles between two bowls.
Arrange the shrimp and vegetables over the noodles.
Drizzle with dressing.
Garnish with herbs, peanuts, and a squeeze of fresh lime.
Build-Your-Own Protein Salad
Start with a generous bed of leafy greens, then mix and match your favorite vegetables, healthy fats, and protein.

Grilled or baked salmon (leftover)
Canned salmon
Smoked trout
Tuna
Sardines
Shrimp
Hard-boiled eggs
Chickpeas
Lentils

Grilled chicken
Rotisserie chicken
Add plenty of colorful vegetables, avocado, nuts or seeds, fresh herbs, and a simple vinaigrette for a complete meal.
Easy Citrus Ceviche
Serves 2–4
Ingredients
1 pound sushi-grade fish (such as halibut, snapper, or mahi-mahi), diced*
¾ cup fresh lime juice
¼ cup fresh lemon juice
½ cup diced cucumber
½ cup diced tomato
¼ cup finely diced red onion
1 jalapeño, minced (optional)
¼ cup chopped cilantro
1 avocado, diced
Sea salt and black pepper, to taste
*For food safety, use only sushi-grade fish from a trusted source, or substitute cooked shrimp or cooked scallops.
Instructions
Combine the fish and citrus juices in a glass bowl.
Refrigerate for 20–30 minutes, stirring once or twice.
Drain most of the citrus juice.
Fold in the vegetables, cilantro, and avocado.
Season to taste and serve immediately.
Mediterranean Hummus Wrap
Serves 2
Ingredients
2 gluten-free wraps (or your favorite wraps)
½ cup hummus
1 cup spinach
½ cup cucumber, sliced
½ cup shredded carrots
½ cup roasted red peppers
¼ cup sliced olives
¼ cup sprouts
Fresh parsley
Optional: grilled tofu, smoked salmon, turkey, or leftover grilled chicken
Instructions
Spread hummus evenly over each wrap.
Layer with vegetables and your choice of protein.
Roll tightly.
Slice in half and serve.

Healthy eating doesn't have to stop when the temperatures rise. Keeping a few convenience staples like cooked shrimp, canned seafood, hummus, pre-washed greens, and fresh vegetables on hand makes it easy to build balanced meals in just a few minutes—without heating up your kitchen.
